Honey Options:
5.5 lbs of any light honey varietal (the more citrusy or tropical the better)
Add your honey into a bucket and top off with enough water if needed to reach the starting gravity listed above.
Follow the Yeast Handlingprocess on MMR to pitch your yeast.
Add 3 oz of Motueka pellet hops (in a mesh bag) into primary on Day 1.
Add all of nutrients (Fermaid-O in this case) 24-hours after yeast pitch.
Allow the mead to ferment dry, rack into secondary and stabilize with sulfite and sorbate.
Secondary additions:
- Another 3 oz of NZ Motueka hop pellets (in a mesh bag)
- Roughly 1.5 lbs of honey to back sweeten to 1.010 SG
Rack into new vessel after 10 days.
