5 gallon
14 lbs Light Wildflower, Orange Blossom, or light floral Clover
For back sweetening: 3-4 lbs of Coriander Blossom
or any other light floral and/or spicy honey varietal
12.5g Go-Ferm
250ml water
10g Lalvin D254
22.4g Fermaid-O
1.105 SG / 24.86 Brix
1/3 sugar break = 1.070
1.000 Estimated FG (before back sweetening)
1.025 Estimated FG (after back sweetening)
For the water you will be diluting your honey into:
Bring 2 gallons of water to a boil, shut off the heat and add the following:
- 10 oz of crushed juniper berries in a mesh bag
- 5 cups of dried elderflower in a separate mesh bag or strain afterwards
- Let steep for 7 minutes
- Remove juniper berries and elderflowers, set the juniper berries aside
- Let the juniper & elderflower tea cool or a gallon or so of ice
- Dilute your 14 lbs of honey into the tea
Top off your must with enough water to reach the starting gravity listed above.
Add the steeped juniper berries into your must.
Follow the Yeast Handling and Nutrient Addition process on MMR.
Allow fermentation to finish on its own. Should end dry.
Transfer off sediment to secondary and back sweeten with 3-4 lbs of Coriander Blossom (preferably) or any other light floral and/or spicy honey varietal, to approximately 1.025-1.035 SG.
